I love testing new foods and creating recipes in my kitchen, so when Golden Oils sent me some pumpkin seed meal I wasn’t too sure about what to do with this green powder. Well after various baking trials, I surprised myself with this amazing gluten free Paleo pumpkin seed biscuit recipe, I’m so happy with the result. I had a trip away for a few days and these were the perfect homemade snacks to save £££ and know I was still chowing down on goodness. Even if my first few attempts to make cakes were a flop, these cookies made up for it and were such an easy snack to carry round. They are simply delicious and smell just like crunchy chocolate cookies, I enjoyed and savoured every single one. There definitely needs to be more testing done with this pumpkin meal, because it’s a another great gluten free alternative and high in nutrients.

Gluten Free Paleo Pumpkin Seed Biscuit Recipe


  • 80g butter
  • 100g coconut sugar
  • 3 TBSP coconut flour
  • 100g pumpkin seed flour
  • 1 tbsp vanilla essence
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 egg


  • Melted chocolate on top
  • 50g mixed seeds
  • 50g cocoa nibs


Pre-heat oven 190c. Mix the butter and dry ingredients together until it crumbles, then add wet ingredients until it sticks together. Grease a tray and shape dough into cookie shapes (make a thumb indent on top if you want to add chocolate like in my picture) and bake in the oven for 15mins and add a chunk of Dark chocolate for the last 5 mins or until golden. Leave to cool and enjoy. A really tasty snack and the kids will love these as much as you do!

What is Pumpkin Seed Meal?

Pumpkin Seed Meal is a result of oil extraction from the natural Pumpkin Seeds, making a concentrated form of protein that is low in fat and high in nutrients. Pumpkin Seed Meal is a good source of protein, magnesium, copper and zinc for healthy metabolism. It’s gluten free and a good substitute for baked goods, as it gives an enhanced nutty flavour. Alternatively you can sprinkle it over your porridge, muesli, salad or add it to smoothies. Personally I think these cookies are amazing and they will be a regular in my kitchen!
