So while travelling a few people have been curious as to how I still manage to eat well on a budget. Well here’s a meal I often have and you can find these common ingredients in most countries. So what exactly is one of my most favourite snacks? Guacamole with carrot and cucumber sticks, yip it’s that simple folks! I LOVE this meal and I love showing people how to make guacamole. Most of the time they can’t believe how simple and delicious it is! When I worked in a retail shop the other day, this is what I took for lunch, it fills me up, it’s great for your skin and is packed full of goodness. I know my other recipes always seem a bit more fancy, so I thought it might be good to show you one to take on the go, especially if you’re travelling and on a budget like me.


Guacamole Recipe

  • 1 large Avocado
  • A handful Coriander/Parsley
  • Dash Olive Oil
  • 1/4 Red onion
  • Dash Cayenne Pepper
  • 1 Lemon ~ juice
  • Pinch Himalayan Rock Salt
  • Pinch Pepper
  • Whole lotta LOVE

Dipping/spreading ingredients

  • Cucumber sticks/slices
  • Carrot sticks
  • Celery sticks
  • Lettuce leaves
  • Peppers

Basically any veggies you can dip or wrap guacamole is pretty awesome in my books, so get inventive peeps 🙂


Cut the Coriander and red onion into small dices pieces. Mash the avocado in a bowl squeeze the lemon juice over the top (this will stop it turning brown) add the salt, peppers and then mix in the diced coriander and onion. Give it all a good stir and add the olive oil and mix again. This seriously takes under 10mins and is so delicious! You’re not limited to what you can use this guacamole for either, as people like it with a salad, in burgers, in wraps, with quinoa… The options are there you just have to get creative with your meals! All these ingredients are easily found at a farmer’s markets and in the supermarket. It’s a good recipe when you are travelling like me as you don’t need any fancy equipment, just a chopping board, knife, bowl and fork/spoon to stir. Now that’s what I call healthy basic raw eating 101!
