Besides all the other bits and pieces I work on I’m currently working on my own recipe book. It’s something I’ve always wanted to do and packed with my favourite’s for every occasion. As I’ve been travelling from country to country I’ve had to adjust my daily routines, as I haven’t always had all the kitchen tools I’m used to. I have however always been able to find a farmer’s market in every place. My diet has evolved over the course of this time as my body agrees with it being more plant-based. What a fun food journey it’s been so far! I love discovering what’s locally in season and I’ve learnt so much about foods I’ve never seen before.
My recipe book idea has always been there, but I’ve never got round to taking this further than an idea – do you know the feeling? My gradual change to a healthier way of living has really helped me explore my potential, do those things I’ve always wanted to and it’s always pushing me outside my comfort zone. I know what makes me excited in life and I’ve discovered things I’m passionate about. It’s a good feeling living this way!
With all that said it’s also nice to take things back a notch, go back to basics and that’s why this salad recipe totally rocks! It’s cooling with a nice kick from the red onions and goes perfectly with almost any lunch or dinner. One way we can add more of the good stuff in our lives is to do just that, add it in and slowly subtract the stuff that comes out of the microwave or a plastic bag/container. Wholesome colourful foods from nature is what we need to aim for, more of these foods in our diets will keep us healthy and vibrant. It’s a far better investment than anything else, as we only have one amazing body so lets look after it!
The Easy Peasy Salad Recipe
- x1 cucumber
- x1/2 red onion
- x1 bunch coriander
- x1/4 juice lemon
- A dash of olive oil
- A sprinkle of himalayan rock salt
- A sprinkle of pepper
Cut the cucumbers and onions and coriander finely add to a bowl, add the lemon juice, olive oil, salt and pepper. I feel like I need to write more instructions for this one, but it really is very basic yet oh so good for you!
